Peanut Butter

Peanut Butter. I knew a man once who thought it was cruel to make kids eat “natural” peanut butter. It tasted funny! If you have a family that thinks this, don’t worry. You don’t have to feed them high fructose corn syrup and mysterious other ingredients.

Making peanut butter is easy. You just need a food processor and some peanuts, but you can also add some salt and a bit of honey if you like. Some people add oil to make it easier to spread. I usually don’t need to, but you can use either peanut oil or whatever you have.

What about separating? I worried about this at first, but it turns out, at least in my house, it doesn’t last long enough for that to be a problem. I guess separating happens when it’s made in a factory and stored for months. Imagine that. :)

Fancy Peanut Butter

2 cups peanuts
1/2 teaspoon salt
1 Tablespoon honey
1 teaspoon oil (optional)

Blend peanuts in food processor for a minute or so, then stop, and scrape the edges. Add remaining ingredients and blend some more until smooth. Note: If you like it crunchy, hold back 1/2 cup peanuts, and add them at the end of processing, and blend until you like the texture.
